6 oranges
1 lb sugar
1/2 cup coriander seed
1 quart cognac
Peel oranges, removing all the white pith from both the oranges and the peels.
Chop peel into small pieces. Squeeze the oranges.
Put the juice and rind into a large bowl. Add the sugar, coriander and cognac and stir to dissolve as much of the sugar as possible.
Pour into a large jar and seal tightly. Let the mixture rest in a dark cool place for two months.
Pour through a sieve and distribute into decorative bottles. Store, tightly capped, in a dark, cool place.
