(Shawn's) Roasted Asparagus with Balsamic Tomatoes
1 lb asparagus, trimmed
1 tbsp extra-virgin olive oil
1 1/2 cups grape tomatoes, halved
1/2 tsp minced fresh garlic
2 tbsp balsamic vinegar
Salt and pepper to taste
1/3 cup crumbled goat cheese
Preheat the oven to 400 degrees.
Place the asparagus and tomatoes in a single layer on a baking sheet and sprinkle liberally with salt and pepper. Mix together the minced garlic, olive oil and balsamic vinegar and drizzle over the asparagus and tomatoes. Toss to coat completely.
Roast for 25 minutes, until tender but still crisp.
After removing sprinkle with the goat cheese. Serve immediately.
I served it with Sesame Beef. Yum!
