When I was a child, we didn't wait to bake them; we just baked them nearly immediately. We didn't suffer any ill effects that I can recall, but it seems all the recipes now on the 'net call for letting them dry or soaking them in water for an hour before cooking (the most common other one I've seen besides your method). I wonder if there's some benefit to it that we missed out on.
