I forgot to post my Carnival of the Recipes entry before I left. (I'm not supposed to be blogging. Don't tell.) But I can always count on my Carnival friends for great new recipes to try - so I didn't want to let them down. (Or at least that's my excuse.)
I have not made this recipe - but it sounds delicious. It's in the Georgia on My Mind Travel Guide.
Peach State Bread
32-oz peach slices
1 cup sugar
1/2 cup shortening
2 eggs
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 1/2 tsp vanilla
1/2 cup finely chopped pecans
1 tsp cinnamon
Drain peaches, saving syrup, and chop into fine pieces. Set aside. Cream together sugar with shortening. Add eggs and continue to mix. Gradually fold in dry ingredients, except cinnamon. Using a wooden spoon fold in vanilla and pecans. Stir in chopped peaches. Pour into greased 8-inch square pan or 9x5-inch loaf pan. Sprinkle with cinnamon. Bake at 325 degrees for 1 hour 5 min. Cool 20 min. before removing from pan.
