This is delicious, but it does take about two hours to make so it's probably not ideal for a week night. But it's worth the time, for sure. (And I am seriously thinking of petitioning the Mississippi legislature for consideration of a bill that spells out that if a husband walks into the kitchen after you have spent two hours preparing said dish and nonchalantly asks, "Did you dirty every dish we own?" it could be considered as potential grounds for divorce - or at the least Exhibit A for the defense during the trial.)
Roasted Vegetable Lasagna
Olive oil or cooking spray
2 medium bell peppers, cut into 1-inch pieces
1 medium onion, cut into 8 wedges and separated into pieces
2 medium zucchini, sliced (4 cups)
8 oz mushrooms, sliced
1/2 tsp salt
1/4 tsp pepper
Tomato Sauce (recipe below)
12 uncooked lasagna noodles
4 c. shredded mozzarella
1 c. shredded Parmesan
Heat oven to 450 degrees. Spray 15 1/2x10x1/2-inch pan with cooking spray. Place bell peppers, onion, zucchini and mushrooms in single layer in pan. Spray veggies with cooking spray; sprinkle with salt and pepper. Bake uncovered 20-25 min., turning vegetables once, until veggies are tender.
While veggies are roasting, prepare Tomato Sauce. Cook and drain noodles as directed on package. Rinse noodles with cold water; drain. Mix cheeses; set aside.
Reduce oven to 400 degrees. Spray 13x9x2 pan with cooking oil. Spread 1/4 cup of the sauce in dish; top with three noodles. Layer with 3/4 cup sauce, 1 1/4 cup veggies and 1 cup cheese mixture. Repeat layers three more times with remaining noodles, sauce, veggies and cheese mix. Bake, uncovered, 20-25 min. or till hot. Let stand 10 min. before cutting.
1 lg onion, chopped
2 tbsp finely chopped garlic
1 28-oz can crushed tomatoes, undrained
1 tbsp dried basil
1 tbsp dried oregano
1 tsp sugar
1/2 tsp salt
1/2 tsp crushed red pepper
Spray 2-qt saucepan with cooking spray. Cook onion and garlic in saucepan over med. heat 2 min., stirring occasionally. Stir in remaining ingredients. Heat to boiling; reduce heat. Simmer 15-20 min.
